Watermelon Radish-Orange Salad  

2 watermelon radishes
1 orange
juice from 1 lime
1 tablespoon finely chopped ginger
1 sprig mint leaves chopped
1 tablespoon chopped chives, red onion or shallot
1 tablespoon olive oil
Salt and fresh ground pepper

Wash and thinly slice the watermelon radishes. Peel the rind from the orange and chop into half inch pieces. Combine the radishes, orange pieces, ginger, mint, chives and olive oil, season with salt and pepper to taste. Let site for a half hour or overnight before eating.
