Turnip Bleu Cheese Salad  
3 tablespoons blue cheese
2 tablespoons mayonnaise or sour cream or plain yogurt
1 tablespoon freshly squeezed lemon juice
1 teaspoon salt
Fresh ground black pepper
1 teaspoon sugar
3 stalks celery thinly sliced
1 bunch young turnips, ends trimmed, halved and thinly sliced
3 spring onions, white and green parts thinly sliced
1/2 cup fresh flat leave parsley, chopped

In a medium mixing bowl, whisk together the blue cheese, mayonnaise or sour cream, lemon juice, sugar, salt and pepper until well combined. Cover and chill until ready to serve. Just before serving in a large bowl toss all the vegetables, chopped parsley; add the sauce and mix well to combine. Taste for seasonings and serve.
