Sweet Potato Pie

Pierce 2 large sweet potatoes several times with a knife, roast on a baking sheet lined with parchment or foil for about an hour at 375 degrees until completely soft. Remove from the oven and let cool until you can peel them, mash with a fork or potato masher until smooth.

3 eggs
1/2 c. sugar
1 and 3/4 c. cooled sweet potato puree
1/2 c. half and half
1 TBSP fresh lemon juice
2 tsp. vanilla
1 tsp. kosher salt
1/4 tsp. ground allspice or nutmeg

Combine all of the filling ingredients and fill into a prepared pie shell, bake at 350 degrees for 40-50 minutes. Let cool completely before serving with some whipped cream if desired.
