Radish Cream Cheese Dip
(adapted from farmgirlfare.com)
 

2 cups peeled and grated, radishes, any variety
1/2 cup chopped scallions, white and green parts (purple spring onions are nice, too)
½ cup (or more to taste) packed chopped fresh parsley
6-8 ounces cream cheese, softened
1 Tablespoon fresh lemon juice
¾ teaspoon salt
Several grinds of fresh pepper

Mix all ingredients in the food processor and blend until combined. Serve with raw vegetable sticks or crackers.
