Cucumber Watermelon Salad  

4 cups cubed watermelon
2 cucumbers, peeled and chopped
3 ears, corn, kernels removed
½ cup diced red onion
1 Tablespoon chopped fresh basil
1 Tablespoon fresh lemon or lime juice and the zest from the fruit
½ teaspoon fresh ground black pepper
2 Tablespoons olive oil
salt to taste

In a large bowl combine watermelon, cucumbers, raw corn, red onion, basil, lemon juice, zest, black pepper and olive oil. Season with salt and stir gently.
