Coconut Curry Mashed Sweet Potatoes  

1 large or 2 medium sized sweet potatoes, about 1.5 pounds
1/2 teaspoon curry powder
1/2 cup coconut milk
Salt and pepper to taste

Preheat oven to 400°F. If using a very large sweet potato, cut in half to reduce the cooking time. Prick whole sweet potatoes with a knife 3-4 times, to prevent bursting. Place potatoes on a parchment lined baking sheet, cook in the oven for about an hour until they are soft. Remove from oven and let cool enough to handle. Remove the peel and place in a bowl. Mash with a fork or and stir in the curry powder and coconut milk. Season the mashed potatoes with salt and pepper if needed.
