Basic Sautéed Greens   

1 bunch greens
1 tablespoon olive oil, or other fat (oil, butter, bacon grease)
1-2 cloves garlic
Red chili flakes
Salt

Cut and wash greens, drain any excess water (no need to dry completely) then set aside. In a large sauté pan, that has a lid, heat the olive oil over medium-high heat, adding the garlic gently stirring, but don't allow the garlic to brown. Add the chili flakes and the greens, toss and cover with the lid to allow to steam. Add extra liquid if needed for tougher greens.
