Baked Squash Fritters  

6-7 pieces of summer squash
1 tsp. salt
½ cup bread crumbs
2 eggs
½ cup cheese (I used white cheddar)
½ cup minced onion
Salt
Pepper

Grate the squash on a box grater. In a large bowl, combine the grated squash with 1 tsp. salt. Let this sit for 30 minutes. Preheat your oven to 400 degrees. Place the grated squash in the center of a clean dish towel, bunch up the ends of the towel, then twist and squeeze to remove as much moisture as you can. Dry out the bowl, that you just used, add the drained squash, bread crumbs, eggs, cheese, onion, salt and pepper. Form the squash mix into balls with your fist. (You have to pack it together). Then bake on a parchment lined, or greased baking sheet at 400 degrees for 30-35 minutes, until slightly brown. Eat right away or save for later.
