Sweet Potatoes

Background Information:
Sweet potatoes are available in early fall through the winter.

Basic Cooking Strategies:
Roast whole or peel and dice, then toss with oil, salt and seasoning, roast in a single layer on a sheet pan until tender. They can be boiled and mashed as well and used for pureed soups. They combine well with sweet spices like cinnamon and nutmeg, but also try mixing with spicy chilies, onion, and cilantro.

Storage Information:
Store sweet potatoes for 5-7 days in a cool, dark place.
